I am a cheater...
I use box cakes most of the time. But I add additional ingredients to it to make it moist. First of all I use Duncan Heinz cake mixes. I don't know if their is a difference in the brands, it's just what the Wilton Cake lady at Michael's told me to use way back when I was taking cake decorating classes.
It is really simple. Just add one extra egg to the mix and a small box of vanilla instant pudding and I use milk in place of water. Bake as usual. To make your cake flat on top instead of having the hump on it just lower the temperature by 25 degrees. It will take longer to bake but it will stay flat.
You will be surprised at how moist and good the cake is when it is done.
