This is REALLY good and super easy. I like to eat it still warm.
1 cup brown sugar
1/4 cup corn starch
1/2 tsp salt
1 cup water
1 2/3 cups milk
2 Tbsp butter or margarine
3 egg yolks
1 1/2 tsp vanilla
Mix brown sugar, corn starch, and salt in large saucepan. Slowly add water and milk. Add butter and bring to a boil over medium heat, stirring constantly. Boil for 1 minute. Slowly whisk hot pudding into beaten eggs. Pour back into pan and boil for 1 more minute. Add vanilla and stir until combined. Enjoy warm or cooled.
You can also add whipped cream to the top or put it on top of ice cream.
