Roasted Carrots

12 Carrots
1 Handful of Fresh Thyme
1/4 Cup of Olive Oil
Salt and pepper

Wash carrots well, there is no need to peel.
Split carrots down the middle into similar sizes, and then spread out on a sheet pan and drizzle them with olive oil.

Toss to make sure they are coated.

Season with the fresh thyme
Sprinkle generously with salt and pepper

Arrange the seasoned carrots onto your sheet pan.


Bake: 400ยบ 35-40 minutes.
