4 bell peppers
1 lbs ground turkey
3 cups brown rice (slightly cooked)
1 jar black bean salsa
1 ½ cup fat free cheese (divided)
1 cup water
Cut tops off tops of bell peppers, and take out seeds and membrane,
In skillet brown turkey meat, drain fat, and then add rice, salsa, and 1 cup of cheese, and stuff bell peppers
Place water in big Crockpot, and place peppers stuffing side up
To cook, at low 6-7 hours at high 3-430 min before done place left over cheese on top of peppers

Sounds good. I will have to try this when our bell peppers are ready in the garden. :)
