Masa
7 C Beef Stock
12 C Maseca
2 C Shortening
1 1/2 T Salt
Filling
Moist Roast
01. Preheat oven to 350 degrees and grease muffin tins.
02. In a saucepan, over medium heat, heat the stock until warm.
03. In the bowl of a heavy-duty mixer, combine the stock and Maseca.
04. With the paddle attachment on medium speed, mix until the texture is like a firm pudding.
05. Remove the mixture from the bowl and set aside.
06. Add the butter and salt to the mixer bowl and whip at high speed for 2 minutes.
07. Add 2 cups of the Maseca mixture and whip for 1 minute at medium speed.
08. Repeat until all of the Maseca mixture has been added.
09. Increase speed to high and continue mixing for 3 to 5 minutes, until the masa is a soft, thick paste.
10. Fill cups ½ full with masa.
11. Place small amount of shredded roast in each cup and press gently until the masa is on top and bottom of filling.
12. Bake at for 25 to 30 minutes.
